Hello Everyone,
So I found AIM Phoenix in the wee hours of this morning (15 or so hours ago), and I've been playing with it all day.
None of the Mac clients provided here work on Intel based machines, and I couldnt get the newest versions of AIM for Mac to work either, so I built a VM with XP and was running AIM there, getting to know some people.
After much toiling, and playing around, I decided to try to bottle 5.1 with an app called wine bottler. AIM 5.1, just being the most stable version I found that I like and fits my needs. I had a bunch of success. They run fine on my machine with basic version of Wine stable installed.
I decided to upload my links here, so maybe they'd be of use to others. My machine is MacOS High Sierra, and these were made with WineBottler. There are 4 versions, some include wine in the app, and it doesn't need to be pre-installed. I will label which are which.

AIM 5.1 - Plain. (Just AIM, no dead aim, no wine):

AIM 5.1 - Wine included. (This means you dont need wine pre installed. Also means, you dont need this version if you already have wine installed. Its a bigger file.)
